Ingredients
- Vegetable oil, for frying
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup whole milk
- ½ cup water
- 1 tablespoon granulated sugar (optional)
- ¼ teaspoon ground cinnamon (optional, for topping)
Instructions
- Pour vegetable oil into a 10 or 12-inch cast iron skillet until it reaches about ½-inch up the sides. Heat over medium heat.
- In a large bowl, whisk together flour, baking powder, and salt. Make a well in the center and pour in the milk and water.
- Stir with a fork until a soft, slightly sticky dough forms.
- Transfer dough to a floured surface. With floured hands, shape it into an 8-inch disc.
- Once oil is hot, carefully place the dough into the skillet. Fry for 4–5 minutes per side, flipping only once, until golden brown and puffed.
- Remove from oil and place on a plate lined with paper towels to drain excess oil.
- If desired, mix cinnamon and sugar together and sprinkle over the hot bannock.
- Slice into 8 wedges and serve warm with butter.

- For a savory option, skip the cinnamon sugar and serve with soups or stews.
