Ingredients

  • ¾ cup packed light brown sugar
  • ½ cup organic cane sugar

  • 1 large egg yolk (room temperature)
  • 2 tsp vanilla extract
  • ½ cup dark chocolate chips
  • 1 cup Medjool dates, pitted and chopped
  • ½ cup walnuts, chopped

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C). Grease a cookie sheet and set it aside.
  2. Mix Dry Ingredients: In a bowl, combine the flour, oats, baking soda, and salt. Whisk to combine and set aside.
  3. Cream Butter and Sugars: In a separate bowl, add the softened butter, brown sugar, and white sugar. Using an electric mixer, cream until smooth. Add the egg and beat again to combine.
  4. Add Egg Yolk and Vanilla: Scrape down the sides of the bowl with a spatula. Add the egg yolk and vanilla extract, and beat again until the mixture is light and fluffy.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid overmixing to keep the cookies soft and chewy.
  6. Fold in Add-ins: Gently fold in the chocolate chips, chopped dates, and walnuts.
  7. Portion the Dough: Using a ¼ measuring cup, scoop the dough into balls and roll them between your palms.
  8. Bake the Cookies: Place the dough balls onto the prepared baking sheet, leaving space between each cookie. Bake for 11-12 minutes or until the edges are lightly golden. The center can remain slightly gooey.
