  • For the Dressing:
    • 1/2 cup olive oil
    • 1/4 cup red vinegar
    • 2 tbsp parsley, chopped
    • 3 cloves garlic, minced or pressed
    • 1 tsp Dijon mustard
    • 1/2 tsp salt
    • 1/4 tsp black pepper

Instructions

  1. Combine the chopped cucumber, halved tomatoes, avocado, onion, and crumbled feta cheese in a large salad bowl.
  2. In a small jar or bowl, whisk together the ingredients for the dressing until fully combined.
  3. Pour the dressing over the salad and toss to coat evenly.
