Ingredients

Hot Honey Sauce

  • 1/3 cup (110g) Honey
  • 1 1/2 tsp Hot Sauce (Frank’s or Cholula recommended)
  • 3/4 tsp Chilli Flakes

Chicken and Seasoning

  • 2 x 250g (9oz) Chicken Breasts, horizontally sliced to make 4 even pieces
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper

Breading

  • 35g (1/4 cup) Plain Flour
  • 2 Eggs, beaten
  • 65g (1 cup) Panko Breadcrumbs

Other

  • Vegetable Oil, as needed (6-8 tbsp for frying)
  • 200g (7oz) Feta, crumbled

Instructions

  1. Prepare Hot Honey Sauce: In a bowl, combine honey, hot sauce, and chili flakes. Warm in the microwave for about 20 seconds or heat gently on the stove until simmering, then remove and let cool. Adjust heat level by varying chili flakes and hot sauce as preferred.
  2. Prepare Chicken: Slice chicken breasts horizontally to create four even pieces. In a small bowl or pot, mix together paprika, salt, onion powder, garlic powder, dried oregano, cayenne pepper, and black pepper to form the seasoning mix.
  3. Set Up Breading Stations: Arrange three shallow dishes and a tray: First dish with plain flour combined with half the seasoning mix; second dish with beaten eggs; third dish with panko breadcrumbs mixed with the remaining seasoning. Coat each chicken piece thoroughly by dredging first in flour, then egg, then breadcrumbs. Place coated chicken on the tray.
  4. Fry Chicken: Pour vegetable oil to coat the base of a large pan and heat on medium-high until a breadcrumb sizzles upon contact. Fry the chicken pieces carefully (in batches if needed) for 3-4 minutes per side until golden, crispy, and cooked through. Transfer cooked chicken to a wire rack positioned over the tray to drain excess oil.
