Instructions

  1. Cook the Sausage: In a large skillet over medium-high heat, add the chicken sausage and cook until browned and no longer pink, breaking it up into pieces as it cooks. Remove the sausage from the skillet and set aside.
  2. Sauté the Onions and Garlic: In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add Chicken Stock: Pour in the chicken broth and bring it to a low boil over medium-high heat.
  4. Cook the Tortellini: Add the frozen tortellini to the skillet and cook according to the package instructions, typically about 3-4 minutes for frozen tortellini.
  5. Add the Cream: Stir in the heavy cream and return the cooked sausage to the skillet. Add the fresh spinach and Parmesan cheese, stirring until the spinach begins to wilt (about 2 minutes). The sauce will thicken as it cools a bit.
