- 1 (8.5 ounce) box cornbread mix (I use Jiffy)
- 1 (14 ounce) can corn, drained
- 1 (14 ounce) can cream corn
- 2 large eggs
- 8 tablespoons butter, melted
- 1/2 teaspoon salt
- 1 teaspoon granulated garlic
- 2 tablespoons granulated sugar
- 1/2 cup sour cream
- 1/8 cup sliced green onions (optional)
- 1 small jalapeno, diced (optional)
- 2 cups shredded cheese (a mixture of pepper jack and cheddar)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350 degrees Fahrenheit. Lightly spray a 9×13 inch casserole dish with non-stick cooking spray to prevent sticking and make cleanup easier.
- Mix Base Ingredients: In a large mixing bowl, combine the cornbread mix, drained whole corn, creamed corn, eggs, melted butter, salt, granulated garlic, and sugar. Whisk these ingredients together until the mixture is well combined and smooth.
- Fold in Additional Ingredients: Gently fold in the sour cream, 1 cup of shredded cheese, diced jalapenos, and sliced green onions (if using). Mix just until all ingredients are incorporated to keep the texture tender.
- Assemble and Add Topping: Pour the batter into the prepared casserole dish, smoothing the surface evenly. Sprinkle the remaining 1 cup of shredded cheese evenly over the top.
- Bake: Place the casserole in the preheated oven and bake for 40 to 45 minutes, or until the center is set and a toothpick inserted in the middle comes out clean. The top should be golden and bubbly.
- Serve Warm: Remove from oven and allow to cool slightly. Serve the corn pudding warm as a delicious side dish.
Notes
- For a spicier dish, increase the amount of jalapeno or add a pinch of cayenne pepper to the batter.
- The cheese topping can be customized; try using just cheddar or a Mexican blend for different flavors.
- Can be made ahead and baked just before serving.
