Cookie Crust
- 1 (21-ounce) pouch Betty Crocker sugar cookie mix
- ½ cup butter, softened
- 2 tablespoons all-purpose flour
- 1 large egg
Cranberry Orange Sauce
- 1½ cups whole cranberries
- ¾ cup orange juice (divided)
- ½ cup granulated sugar
- ⅛ teaspoon salt
- 2 teaspoons orange zest
Cheesecake Layer
- 2 (8-ounce) packages cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Prepare Oven and Pan: Heat the oven to 350°F (175°C) and lightly spray the bottom of a 9×13-inch baking pan to prevent sticking.
- Make Cookie Crust: In a medium bowl, beat the softened butter and egg until smooth. Add the sugar cookie mix and flour, then beat until a crumbly dough forms. Press this mixture evenly into the prepared pan and bake for 18 minutes. Remove from the oven once done.
- Cook Cranberry Orange Sauce: In a small saucepan, combine cranberries, ½ cup of orange juice, sugar, salt, and orange zest. Cook over medium heat for 6 to 8 minutes, stirring occasionally until the cranberries burst and the sauce thickens. Stir in the remaining ¼ cup orange juice for added brightness, then remove from heat.
- Prepare Cheesecake Layer: In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and eggs, mixing just until combined to avoid overmixing.
- Assemble Bars: Spread the cheesecake mixture evenly over the partially baked cookie crust. Spoon the cranberry orange sauce over the cheesecake layer and use a butter knife to gently swirl the sauce into the cheesecake layer for a marbled effect.
- Bake Cheesecake Bars: Return the pan to the oven and bake for 30 minutes or until the cheesecake layer is set and no longer jiggles.
- Chill and Serve: Refrigerate the bars for at least 2 hours to allow them to set completely before slicing and serving.
