Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or grease it thoroughly to prevent sticking.
- Blend wet ingredients: In a blender or food processor, add the cottage cheese, eggs, coconut sugar, vanilla extract, and melted coconut or avocado oil. Blend until the mixture is completely smooth and creamy, ensuring the cottage cheese is fully incorporated.
- Whisk dry ingredients: In a large mixing bowl, whisk together the dutch-processed cocoa powder, oat flour, and sea salt until evenly combined.
- Combine wet and dry ingredients: Pour the blended wet mixture into the dry ingredients. Gently stir with a spatula or spoon until just combined, taking care not to overmix.
- Fold in chocolate chips: Gently stir in the chocolate chips, reserving a few to sprinkle on top of the batter for an extra chocolatey finish.
- Transfer batter and bake: Pour the batter into the prepared baking dish and smooth the top evenly with a spatula. Sprinkle additional chocolate chips on top if desired. Bake in the preheated oven for 22-25 minutes or until the edges are set but the center remains slightly soft.
