  • 2 tbsp instant coffee

Coating

  • 3/4 cup dark chocolate (melted)
  • Coffee beans (for garnish)

Instructions

  1. Prepare Chickpeas and Melt Chocolate: Drain and rinse the chickpeas thoroughly. Melt 1/2 cup of dark chocolate either in the microwave or over a double boiler on the stovetop, ensuring it is smooth and fully melted.
  2. Blend Ingredients: Combine the chickpeas, cashew butter, melted dark chocolate, and instant coffee in a food processor. Blend for 45-60 seconds or until the mixture is smooth and well incorporated.
  3. Form Truffles: Using a cookie scoop, portion the mixture onto a baking sheet lined with parchment paper. Roll each portion into smooth, round balls. Place the baking sheet in the freezer for 15-20 minutes to allow the truffles to harden slightly.
  4. Melt Coating Chocolate: While the truffles chill, melt the remaining 3/4 cup of dark chocolate for dipping, using the microwave or double boiler method.
  5. Coat Truffles: Remove truffles from the freezer and dip each one thoroughly in the melted chocolate. Return the coated truffles onto the parchment-lined baking sheet. Garnish each with a coffee bean on top.
  6. Final Freeze and Storage: Place the coated truffles back into the freezer until the chocolate hardens completely. Once set, store the truffles in the refrigerator for up to 7-10 days or in the freezer for 30-60 days.
