Cinnamon Apple Waffles made with whole grain flour, shredded apples, and warm spices for a cozy, nutritious breakfast. These waffles are dairy-free, freezer-friendly, and can easily be made vegan using flax eggs.

Ingredients

  • 2 cups white whole wheat flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon fine sea salt
  • 2 large eggs (or flaxseed eggs for vegan)
  • 1.5 cups unsweetened non-dairy milk
  • 1/4 cup avocado oil or melted/cooled coconut oil
  • 1/4 teaspoon vanilla extract
  • 1 cup shredded apples (about 2 small apples)
  • Warm Apple Topping:
  • 1 medium apple, peeled and sliced
  • 1/2 teaspoon ground cinnamon
  • 1/2 tablespoon coconut oil or dairy-free butter

Instructions

  1. Preheat your waffle iron and lightly grease if needed.
  2. In a large bowl, whisk together the eggs and oil. Add vanilla extract and non-dairy milk, and whisk until combined.
  3. Add in flour, baking powder, baking soda, salt, and cinnamon. Stir with a spatula until no lumps remain. Fold in shredded apples. Adjust batter consistency with more milk or flour if necessary.
  4. Pour 1/4 cup of batter into the waffle iron. Cook on low-medium heat for 3–4 minutes, or until waffles are lightly golden. Adjust timing based on your waffle maker.
  5. Transfer cooked waffles to a 160ºF oven to keep warm while you cook the rest.
  6. For the topping: In a medium skillet, sauté sliced apples with cinnamon and coconut oil over medium heat for about 5 minutes, or until soft.
  7. Serve waffles warm with the cinnamon apple topping and enjoy.

Notes

  • For vegan version, substitute eggs with flax eggs (1 tbsp flaxseed + 3 tbsp water per egg).
  • Use gluten-free 1:1 flour blend for a GF option.
  • To reheat: Toast waffles in a toaster or oven at 350ºF for 5–10 minutes.
  • To freeze: Cool waffles completely and store in a freezer bag for up to 3 months. Reheat directly from frozen.
