Instructions
- In a large bowl, mix together flour, sugar, baking powder, salt, and cocoa. Make a well in the center and set aside.
- Separate the eggs. In a medium bowl, beat the egg whites with a hand mixer until fluffy and meringue-like.
- In another bowl, whisk together the egg yolks, milk, melted butter, and vanilla. Gently fold in the whipped egg whites—it’s okay if the mixture is a bit lumpy.
- Pour the wet mixture into the dry ingredients and stir with a rubber spatula just until combined; avoid overmixing.
- Fold in the chocolate chips.
- Preheat your waffle iron. Pour batter into the center of the iron using a ladle and cook until crisp, about 4 minutes depending on your waffle maker.
- Serve hot with desired toppings like whipped cream, syrup, or fresh berries.
