Ingredients
- 1/2 cup unsalted butter (8 Tbsp), softened
- 2/3 cup granulated sugar
- 2 large eggs, room temperature
- 3 medium/large very ripe bananas (about 1 3/4 cups mashed)
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips, divided (or mini chocolate chips/chunks)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a mixing bowl with a paddle attachment (or by hand), cream together softened butter and sugar until light and fluffy. Add eggs and mix until smooth.
- Mash bananas with a fork until they resemble chunky applesauce. Add mashed bananas and vanilla extract to the mixing bowl and stir to combine.
- In a separate bowl, whisk together flour, baking soda, and salt. Add dry mixture to the wet mixture and mix until just combined.
- Fold in 3/4 cup chocolate chips. Pour batter into the prepared loaf pan and sprinkle remaining 1/4 cup chocolate chips on top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use extra ripe bananas for maximum sweetness and flavor.
- Substitute chocolate chips with chopped nuts for a different twist.
- Wrap in foil or plastic wrap to keep moist for several days.
- Banana bread can be frozen for up to 3 months—just thaw overnight in the fridge.
