Instructions

  1. Cook Pasta: Cook pasta according to package instructions in generously salted water until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Prepare Chicken: Season chicken cutlets with salt and pepper. Dredge in flour, shaking off excess.
  3. Cook Chicken: In a large skillet, heat a drizzle of olive oil over medium heat. Cook chicken until golden brown and cooked through on both sides. Transfer to a plate.
  4. Sauté Aromatics: In the same skillet, melt 2 tablespoons butter. Sauté shallots and garlic for 1–2 minutes until fragrant. Stir in capers.
  5. Make Sauce: Add chicken broth, lemon juice, and lemon slices. Season with salt and pepper to taste.
  6. Simmer Chicken: Return chicken to skillet and simmer for 2–3 minutes to thicken sauce slightly. Remove chicken and set aside.
  7. Finish Sauce: Turn off heat, then stir in remaining 3 tablespoons butter until sauce is glossy. Spoon half of sauce over chicken; leave the rest in the skillet.
  8. Combine Pasta: Toss cooked pasta in the remaining sauce. Add reserved pasta water as needed to loosen the sauce.
