Ingredients
- For the Chicken:
- ¼ cup olive oil
- Juice of 2 lemons
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon dried thyme
- 4 cloves garlic, minced
- 4 boneless, skinless chicken breasts
- 3 tablespoons oil from a jar of sun-dried tomatoes (marinated in oil)
- For the Sauce:
- 1 stick (½ cup) butter, cut into slices
- 4 cloves garlic, minced
- Juice of 2 lemons
- ½ cup heavy cream
- ⅓ cup freshly grated Parmesan cheese
- 3 ounces goat cheese
- ⅔ cup sun-dried tomatoes in oil, oil drained and chopped
- ¼ cup fresh basil, chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Make the Marinade: In a bowl, whisk together olive oil, lemon juice, salt, pepper, oregano, basil, thyme, and minced garlic.
- Marinate the Chicken: Place chicken breasts in a large freezer bag, pour in the marinade, seal, and gently massage to coat. Let sit at room temperature for 30 minutes or refrigerate up to 2 hours.
- Cook the Chicken: Heat sun-dried tomato oil in a large skillet over medium heat. Add marinated chicken and cook for about 7 minutes per side, or until the internal temperature reaches 165°F. Transfer cooked chicken to a platter and keep warm.
- Make the Sauce: In the same skillet, melt butter. Add minced garlic and sauté for 30 seconds until fragrant.
- Deglaze: Add lemon juice and stir, scraping up any browned bits from the skillet.
- Make it Creamy: Reduce heat and stir in heavy cream. Simmer for 3–5 minutes until slightly thickened.
- Finish the Sauce: Add Parmesan and goat cheese; stir until melted and smooth. Stir in chopped sun-dried tomatoes and fresh basil. Season with salt and pepper to taste.
- Serve: Spoon the sauce generously over the cooked chicken breasts and serve warm.
Notes
- You can substitute boneless thighs for breasts if preferred; adjust cooking time accordingly.
- Use fresh basil for best flavor, but dried can be used in a pinch.
- Pair with mashed potatoes, pasta, or roasted vegetables for a complete meal.
- Marinate no longer than 2 hours for best texture and flavor.
