Ingredients

  • ⅓ cup freshly grated Parmesan cheese
  • 3 ounces goat cheese
  • ⅔ cup sun-dried tomatoes in oil, oil drained and chopped
  • ¼ cup fresh basil, chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Make the Marinade: In a bowl, whisk together olive oil, lemon juice, salt, pepper, oregano, basil, thyme, and minced garlic.
  2. Marinate the Chicken: Place chicken breasts in a large freezer bag, pour in the marinade, seal, and gently massage to coat. Let sit at room temperature for 30 minutes or refrigerate up to 2 hours.
  3. Cook the Chicken: Heat sun-dried tomato oil in a large skillet over medium heat. Add marinated chicken and cook for about 7 minutes per side, or until the internal temperature reaches 165°F. Transfer cooked chicken to a platter and keep warm.
  4. Make the Sauce: In the same skillet, melt butter. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Deglaze: Add lemon juice and stir, scraping up any browned bits from the skillet.
  6. Make it Creamy: Reduce heat and stir in heavy cream. Simmer for 3–5 minutes until slightly thickened.
  7. Finish the Sauce: Add Parmesan and goat cheese; stir until melted and smooth. Stir in chopped sun-dried tomatoes and fresh basil. Season with salt and pepper to taste.
