Ingredients
- 1 1/2 cups graham cracker crumbs
- 5 tablespoons melted butter
- 1/2 teaspoon cinnamon
- 2 (8 oz) packages cream cheese, softened
- 1/3 cup sour cream
- 2/3 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1 1/2 cups cherry pie filling
Instructions
- Preheat oven to 350°F. Line an 8×8 baking pan with parchment paper or spray with nonstick spray.
- In a bowl, combine graham cracker crumbs, melted butter, and cinnamon. Mix until fully combined.
- Press the mixture into the bottom of the pan and bake for 5 minutes. Remove from oven and set aside.
- Lower oven temperature to 325°F.
- In a large bowl, beat cream cheese until smooth (about 30 seconds). Add sour cream, sugar, vanilla, eggs, and flour. Mix until creamy and fully incorporated.
- Pour the filling over the prepared crust. Drop spoonfuls of cherry pie filling on top and swirl with a toothpick or skewer.
- Bake for 35 minutes. Let cool at room temperature, then refrigerate for at least 3–4 hours.
- Slice into bars and serve chilled.
Notes
- Use full-fat cream cheese for the best texture and flavor.
- Let the bars chill completely for clean slices.
- Swap cherry for blueberry or raspberry pie filling for variation.
- Store leftovers covered in the fridge for up to 4 days.
