Fritters
- 1/3 cup mayonnaise (full fat)
- 1/4 cup all-purpose flour

- 1 1/2 cups shredded cheese (cheddar or your choice)
- 1 1/2 cups cooked wild rice
- 1 lb. chicken breasts (diced into 1/4 inch pieces)

Garlic Herb Sauce
- 1/2 cup mayonnaise
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon chopped parsley
Instructions
- Prepare the fritter mix: In a medium bowl, whisk together the mayonnaise, all-purpose flour, eggs, ground cayenne pepper, grated garlic, salt, and pepper until combined. Fold in the shredded cheese, cooked wild rice, diced chicken, and chopped parsley using a spatula. The batter will be slightly thin. Cover the bowl and refrigerate for at least 2 hours or preferably overnight to let the flavors meld and batter thicken.
- Pan-fry the fritters: Heat a tablespoon of oil in a 10-inch skillet over medium heat. Using a small cookie scoop and a teaspoon, drop the batter into the skillet forming 1 1/2 inch circles. Use the teaspoon to gently spread the batter evenly. Cook the fritters for 6 to 8 minutes, flipping halfway through, until both sides are golden brown and the chicken is fully cooked inside. Add more oil to the pan as needed and repeat with the remaining batter.
- Make the garlic herb sauce: While the fritters cook, combine 1/2 cup mayonnaise, lemon juice, ground cayenne pepper, garlic powder, and chopped parsley in a small bowl. Mix well and season with salt and pepper to taste.
- Serve: Plate the golden fritters and serve warm alongside the garlic herb sauce for dipping.
