Ingredients
Meat and Vegetables
- 1 lb. ground round
- 1 small (6 oz.) yellow onion, chopped (about 1 cup)
- 4 medium garlic cloves, finely chopped (about 2 Tbsp.)
Dairy and Condiments
- 1 (10 1/2-oz.) can condensed cream of chicken soup
- 1 (8-oz.) container sour cream
- 1/2 cup ranch dressing
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. Dijon mustard
- 10 oz. sharp Cheddar cheese, shredded (about 2 1/2 cups), divided
- 2 Tbsp. unsalted butter, melted
Other
- 1 (30-oz.) bag frozen shredded hash browns, thawed
- 2 cups cornflakes cereal, lightly crushed
- 1 1/2 tsp. kosher salt, divided
- 3/4 tsp. black pepper
- Cooking spray
- Chopped fresh flat-leaf parsley, for garnish
Instructions
- Preheat and Prepare: Preheat your oven to 350°F and lightly coat a 13- x 9-inch baking dish with cooking spray to prevent sticking.
- Cook Beef Mixture: Heat a large nonstick skillet over medium-high heat. Add ground beef, chopped onion, and 1 teaspoon of kosher salt. Cook, stirring occasionally, until the beef is lightly browned and cooked through, about 5 to 8 minutes. Stir in the garlic and black pepper, cooking constantly until fragrant, about 1 minute.
- Combine Casserole Ingredients: To the skillet, add thawed hash browns, cream of chicken soup, sour cream, ranch dressing, Worcestershire sauce, Dijon mustard, 1 1/2 cups of shredded cheddar cheese, and the remaining 1/2 teaspoon salt. Stir everything until evenly combined and then remove from heat.
- Assemble in Baking Dish: Transfer the mixture to the prepared baking dish, spreading it out evenly. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
- Add Crunchy Topping: In a medium bowl, combine crushed cornflakes and melted butter. Evenly sprinkle this mixture over the cheese layer to create a crunchy topping.
- Bake to Perfection: Place the casserole in the preheated oven and bake for 25 to 30 minutes or until it’s bubbly and the cornflake topping is golden brown.
- Garnish and Serve: Remove from oven and garnish with chopped fresh flat-leaf parsley before serving. Enjoy this hearty, cheesy casserole warm.
Notes
- For a richer flavor, you can use sharp or extra-sharp cheddar cheese.
- Make sure the hash browns are fully thawed to ensure even cooking.
- Substitute cream of chicken soup with cream of mushroom soup for a different flavor profile.
- The cornflake topping adds a crunchy texture but can be omitted for a softer top layer.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
