  • Total Time: 40 mins
  • Yield: 10 servings

Ingredients

Meat and Vegetables

  • 1 lb. ground round
  • 1 small (6 oz.) yellow onion, chopped (about 1 cup)
  • 4 medium garlic cloves, finely chopped (about 2 Tbsp.)

Dairy and Condiments

  • 1 (10 1/2-oz.) can condensed cream of chicken soup
  • 1 (8-oz.) container sour cream
  • 1/2 cup ranch dressing
  • 2 Tbsp. Worcestershire sauce
  • 2 Tbsp. Dijon mustard
  • 10 oz. sharp Cheddar cheese, shredded (about 2 1/2 cups), divided
  • 2 Tbsp. unsalted butter, melted

Other

  • 1 (30-oz.) bag frozen shredded hash browns, thawed
  • 2 cups cornflakes cereal, lightly crushed
  • 1 1/2 tsp. kosher salt, divided
  • 3/4 tsp. black pepper
  • Cooking spray
  • Chopped fresh flat-leaf parsley, for garnish

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F and lightly coat a 13- x 9-inch baking dish with cooking spray to prevent sticking.
  2. Cook Beef Mixture: Heat a large nonstick skillet over medium-high heat. Add ground beef, chopped onion, and 1 teaspoon of kosher salt. Cook, stirring occasionally, until the beef is lightly browned and cooked through, about 5 to 8 minutes. Stir in the garlic and black pepper, cooking constantly until fragrant, about 1 minute.
  3. Combine Casserole Ingredients: To the skillet, add thawed hash browns, cream of chicken soup, sour cream, ranch dressing, Worcestershire sauce, Dijon mustard, 1 1/2 cups of shredded cheddar cheese, and the remaining 1/2 teaspoon salt. Stir everything until evenly combined and then remove from heat.
  4. Assemble in Baking Dish: Transfer the mixture to the prepared baking dish, spreading it out evenly. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  5. Add Crunchy Topping: In a medium bowl, combine crushed cornflakes and melted butter. Evenly sprinkle this mixture over the cheese layer to create a crunchy topping.
  6. Bake to Perfection: Place the casserole in the preheated oven and bake for 25 to 30 minutes or until it’s bubbly and the cornflake topping is golden brown.
  7. Garnish and Serve: Remove from oven and garnish with chopped fresh flat-leaf parsley before serving. Enjoy this hearty, cheesy casserole warm.

Notes

  • For a richer flavor, you can use sharp or extra-sharp cheddar cheese.
  • Make sure the hash browns are fully thawed to ensure even cooking.
  • Substitute cream of chicken soup with cream of mushroom soup for a different flavor profile.
  • The cornflake topping adds a crunchy texture but can be omitted for a softer top layer.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
