These juicy, cheesy Cheeseburger Sliders have everything you love about a classic burger, packed into convenient, shareable mini sandwiches. Perfect for parties, game days, or a quick weeknight dinner, and they reheat beautifully too!

Ingredients

  • 2 lb lean ground beef (90/10 or 93/7 fat content)
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion, finely diced
  • 1/4 cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar cheese, shredded (or use more sliced cheese)
  • 24 dinner rolls (or 2 packs of 12)
  • 2 Tbsp unsalted butter, melted (plus more to grease baking sheet)
  • 1 Tbsp sesame seeds

Instructions

  1. Preheat oven to 350˚F. Grease the bottom of a rimmed baking sheet with butter.
  2. In a large skillet over medium-high heat, heat olive oil and sauté diced onion for 1–2 minutes.
  3. Add ground beef and break it up with a spatula. Season with salt, pepper, and garlic powder.
  4. Cook the beef until just cooked through, then remove from heat. Spoon off and discard any excess fat.
  5. Stir mayonnaise into the cooked beef until well combined.
  6. Cut dinner rolls in half horizontally. Place the bottom halves on the prepared baking sheet and layer with sliced cheddar cheese.
  7. Spread the beef mixture evenly over the cheese layer. Press it into a flat, even layer using a spatula.
  8. Sprinkle shredded cheddar over the beef.
  9. Top with the upper halves of the rolls, cut-side down. Brush tops with melted butter and sprinkle with sesame seeds.
  10. Bake at 350˚F for 12–15 minutes, until the cheese is melted and tops are golden brown.
  11. Remove from oven, slice, and serve warm.

Notes

  • Use pre-sliced cheese to save time or adjust the type of cheese based on preference.
  • These sliders can be assembled ahead of time and baked just before serving.
