Ingredients
Main Ingredients
- 3 cups cereal of choice
- 2/3 cup peanut butter or nut butter of choice
- 1/2 cup agave, honey, or brown rice syrup
Optional Ingredients
- 1/2 tsp salt
- 3 tbsp protein powder
Instructions
- Prepare the Pan: Line an 8-inch pan with wax or parchment paper. For larger batches, you can double the recipe and use a 9×13-inch pan.
- Warm Nut Butter: If your nut butter is too thick to stir easily, gently warm it until it becomes soft and stirrable, but do not overheat.
- Mix Ingredients: In a large bowl, combine the cereal, nut butter, sweetener (agave, honey, or brown rice syrup), and if using, the salt and protein powder. Stir thoroughly until all ingredients are evenly combined.
- Press into Pan: Pour the mixture into the prepared pan. Place a second sheet of parchment paper on top and press down very firmly to compact the cereal mixture. This tight press is crucial to ensure the bars hold together when sliced.
- Chill to Set: Freeze the pressed mixture for at least 30 minutes or until firm enough to slice into bars.
- Slice and Store: Remove from the freezer, slice into 9 bars, and store leftovers covered in the refrigerator, freezer, or in a cool, dry place at room temperature.
Notes
- Use any dry cereal you like—granola, oats, cornflakes, or puffed rice work well.
- Adjust sweetness by choosing honey, agave nectar, or brown rice syrup according to your preference.
- Pressing firmly is key to prevent the bars from crumbling apart later.
- Optional protein powder boosts nutrition but may slightly alter texture.
- These bars keep best refrigerated or frozen but can be stored at room temperature if kept in a dry, cool environment.
