Ingredients

  • For the Carmelitas:
  • ¾ cup salted butter, melted
  • ⅔ cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • 1 ¼ cups rolled oats (old-fashioned oats)
  • 1 teaspoon baking soda
  • ½ teaspoon salt (divided)
  • 40 chewy caramel squares (such as Kraft brand)
  • ⅓ cup heavy cream
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Prepare the Pan: Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper and spray the parchment with nonstick spray. Set aside.
  2. Make the Crust Mixture: In a large microwave-safe bowl, melt the butter. Whisk in the brown sugar and vanilla extract until combined. Stir in the flour, oats, baking soda, and ¼ teaspoon salt until a crumble forms.
  3. Bake the Bottom Layer: Add half of the oat mixture into the prepared baking pan and bake for 10 minutes.
  4. Make the Caramel Layer: While the bottom layer is baking, place the caramel squares, heavy cream, and the remaining ¼ teaspoon of salt into a large microwave-safe bowl. Microwave for 1 minute, stir, and then heat for another minute. Stir until the caramel mixture is smooth.
  5. Assemble the Carmelitas: When the crust is finished baking, sprinkle the chocolate chips evenly over the top. Pour the caramel sauce over the chocolate chips. Sprinkle the remaining oat mixture on top and gently tap it down with your hands.
  6. Bake the Carmelitas: Bake for an additional 15 minutes, or until the top is lightly browned.
  7. Cool and Serve: Transfer the pan to a wire rack and allow it to cool completely before slicing into squares.

Notes

  • Let the Carmelitas cool completely before cutting to avoid a messy cut.
  • For extra flavor, you can add a pinch of sea salt on top of the caramel layer before baking.
