These Caramel Apple Crumble Bars are a sweet and comforting dessert layered with a brown sugar oat crust, spiced apples, gooey caramel sauce, and a crumble topping. Made with Granny Smith and Gala apples, these irresistible bars are perfect for fall baking or holiday gatherings.

  • Total Time: 1 hour 8 minutes
  • Yield: 16 bars

Ingredients

  • Crust and Crumble Topping:
  • 1 1/2 cups butter, melted and slightly cooled
  • 1 1/2 cups brown sugar, lightly packed
  • 2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons vanilla
  • Apple Filling:
  • 3 1/2 cups apples, peeled and diced (Granny Smith and Gala)
  • 1 teaspoon allspice
  • 1 teaspoon lemon juice
  • 2 tablespoons all-purpose flour
  • 1 (10.8 oz) package caramels (e.g., Werther’s soft caramels)
  • 3 tablespoons heavy cream
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper and set aside.
  2. In a large bowl, mix together melted butter, brown sugar, flour, oats, salt, baking soda, cinnamon, and vanilla until well combined.
  3. Press half of the mixture into the prepared baking pan to form the crust.
  4. In a separate bowl, toss diced apples with lemon juice, allspice, and flour until evenly coated. Spread the apple mixture evenly over the crust.
  5. In a medium saucepan over medium-low heat, melt the caramels with the heavy cream, stirring frequently until smooth. Remove from heat and stir in vanilla. Let cool slightly.
  6. Drizzle the caramel sauce evenly over the apples.
  7. Crumble the remaining oat mixture evenly over the top.
  8. Bake for 25–30 minutes or until the edges are lightly browned.
  9. Remove from the oven and allow to cool for about 30 minutes before slicing.
  10. Serve as-is or with a scoop of vanilla ice cream for extra indulgence.

Notes

  • Use a mix of tart and sweet apples (like Granny Smith and Gala) for the best flavor balance.
  • Let the bars cool completely for cleaner slices.
  • To save time, use pre-made soft caramels for the sauce, or substitute with store-bought caramel sauce if needed.
  • Bars can be stored in an airtight container at room temperature for 2–3 days or refrigerated for up to 5 days.
