Instructions

  1. Make the Cajun Cream Sauce: In a large skillet over medium heat, melt the butter. Sprinkle the flour, Cajun seasoning, and paprika over the melted butter and whisk to combine. Cook for 1 more minute.
  2. Pour in the heavy cream and chicken broth, whisking until combined. Bring the mixture to a simmer, then reduce the heat to low and continue simmering for about 10 minutes, stirring occasionally, until the sauce thickens.
  3. Cook the Seafood:
  4. Season the Salmon: Season the salmon fillets with half of the Cajun seasoning.
  5. Cook the Salmon: In a separate skillet over medium heat, add butter and vegetable oil. Remove the salmon from the pan and set it aside, tented with foil to keep warm.
  6. Season and Cook the Shrimp: Season the shrimp with the remaining Cajun seasoning and add them to the skillet. Cook for 2-3 minutes on each side, or until fully cooked. Remove the pan from the heat and set aside.
  7. Finish the Sauce: To the simmering sauce, add the Monterey Jack cheese and spinach. Stir until the cheese is melted and the spinach has wilted (about 3-5 minutes).
  8. Combine and Serve: Add the salmon and shrimp to the sauce, gently tossing to coat. Garnish with chopped parsley and serve immediately with your favorite sides (like mashed potatoes and vegetables).
