Instructions
- Preheat the oven: Preheat your oven to 450°F (232°C) and line two large baking sheets with parchment paper to prevent sticking and ensure even baking.
- Make the batter: In a large bowl, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, and sea salt. Slowly add the water while whisking until smooth and free of lumps to create a thick coating batter.
- Coat the cauliflower: Add the cauliflower florets to the batter and stir well, ensuring each piece is fully coated. Lift the florets out of the batter one by one, allowing excess batter to drip back into the bowl to avoid sogginess.
- First bake: Arrange the coated cauliflower florets in a single layer on the prepared baking sheets. Bake for 10 minutes. After that, carefully flip each floret using a spatula to ensure even cooking, then bake another 10 minutes. Swap the pans’ positions in the oven to maintain even heat distribution.
- Brush with buffalo sauce: Remove the cauliflower from the oven and brush each piece with buffalo sauce generously to coat them for flavor and heat.
- Final bake: Return the cauliflower to the oven and bake for an additional 12 to 15 minutes or until the edges appear dark and crisp, signaling a perfect texture.
- Serve: Take out the wings and brush again with extra buffalo sauce if desired. Serve warm, optionally accompanied by ranch, vegan ranch, or blue cheese dressing for dipping to balance the spicy heat.
