- 8 ounces fusilli pasta (or pasta of choice)
- 1 head broccoli, cut into small florets
- 2 tablespoons butter, divided
- 1 pound jumbo shrimp, peeled, deveined, tails off
- 1/2 teaspoon Italian seasoning (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 garlic cloves, minced
- 1 tablespoon all-purpose flour
- 1 cup milk
- 4 ounces cream cheese
- 1/4 cup parmesan cheese, plus more for serving
Instructions
- Cook the Pasta & Broccoli: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package directions. During the last 2 minutes of cooking, add the broccoli florets to the same pot and cook them with the pasta. Before draining, reserve 1/2 cup of pasta cooking water. Set both the pasta and broccoli aside.
- Cook the Shrimp: In a large pan, heat 1 tablespoon butter over medium heat. Season the shrimp with salt and pepper, then add them to the pan. Cook the shrimp for 2-3 minutes per side until they turn opaque and are fully cooked. Toss the cooked shrimp with the pasta and broccoli.
- Make the Alfredo Sauce: In the same pan, melt the remaining 1 tablespoon butter. Add garlic and cook, stirring constantly, for about 1 minute until fragrant. Add the flour and whisk to combine. Cook for 1 additional minute. Slowly whisk in the milk, followed by the cream cheese, and let the sauce simmer uncovered for 2-3 minutes until thickened.
- Combine the Pasta and Sauce: Add the pasta mixture to the sauce and stir well to combine. Add the reserved pasta cooking water to adjust the sauce to your desired thickness. Remove from heat and fold in the parmesan cheese.
- Serve: Serve immediately with extra parmesan cheese if desired.
Notes
- If you prefer a spicier dish, feel free to add red pepper flakes to the sauce while it simmers.
- You can use any type of pasta, but fusilli or penne works well to hold the sauce.
- For extra creaminess, you can add more cream cheese or even a splash of heavy cream to the sauce.
