Ingredients

Chicken

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 1/2 medium onion, chopped
  • 3/4 cup chicken broth (low sodium recommended if sensitive to salt)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
  • 1-2 tablespoons chopped parsley, optional

Instructions

  1. Prepare the chicken: Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season both sides with garlic powder, salt, and pepper to taste.
  2. Cook the chicken: Heat olive oil and butter in a skillet over medium-high heat until melted and hot. Add the chicken pieces and cook for 5 to 6 minutes per side or until cooked through and golden brown. Remove chicken to a plate and set aside.
  3. Sauté the onions: In the same skillet, add the chopped onions and sauté for about 5 minutes until softened and lightly browned. If the pan looks dry, add a small splash of olive oil to prevent sticking.
  4. Make the sauce: Pour in the chicken broth and add the softened Boursin cheese. Stir continuously until the cheese melts and the sauce becomes smooth. Let the sauce bubble gently for 5 minutes to thicken and develop flavor. Add chopped parsley now if using.
  5. Combine chicken and sauce: Return the cooked chicken pieces along with any accumulated juices back into the skillet. Cook for another couple of minutes to warm the chicken through and allow it to soak up the sauce. The sauce should thicken further; if too thick, add an extra splash of chicken broth.
  6. Final seasoning and serve: Taste and adjust seasoning with salt and pepper if necessary (the sauce may be salty already if using regular broth). Serve the chicken immediately, spooning the creamy Boursin sauce over the top.
