Instructions
- Preheat the Oven: Preheat your oven to 400°F. Line a large baking sheet with parchment paper to catch any spills from the blueberry jam.
- Prepare the Flatbreads: Place the flatbreads on the prepared baking sheet. Spread blueberry preserves evenly on the flatbreads, leaving a 1/2-inch crust.
- Add the Cheeses and Blueberries: Sprinkle crumbled feta cheese and ricotta cheese over the flatbreads. Top with fresh blueberries. Tip: For melty pockets of cheese, dollop the ricotta in small spoonfuls and evenly sprinkle the feta.
- Toast the Flatbread: Toast in the preheated oven for 10-12 minutes, or until the flatbread is lightly toasted and the cheese has melted.
- Finish and Serve: Let the flatbreads cool slightly. Drizzle with hot honey and garnish with mint leaves. Slice and serve while warm.
Notes
- The hot honey adds a wonderful spicy-sweet contrast, but you can adjust the amount to suit your taste.
