Ingredients
Rice
- 1 1/3 cup water
- 1 cup long grain rice, rinsed until water runs clear
- 2 Tbsp salted butter
Green Beans
- 2 Tbsp cooking oil
- 8 oz fresh green beans, trimmed, rinsed, and dried
- 1/4 tsp salt
- 1/8 tsp black pepper
Other
- 2 eggs
- 2 tsp chili crisp
Instructions
- Cook the rice: In a small heavy-bottomed pot set over medium-high heat, bring the water to a boil. Add the rinsed rice and the salted butter. When the water returns to a boil and steam vents appear on the surface, cover the pot and reduce the heat to medium-low. Let the rice simmer without uncovering for about 15 minutes.
- Soft boil the eggs: While the rice cooks, bring an inch of water to a boil in a small pot. Add the eggs directly from the fridge to the boiling water. Lower the heat, cover the pot, and simmer the eggs for 6 minutes. Remove the eggs and immediately place them under cold running water to stop further cooking.
- Blister the green beans: Heat a large skillet over medium-high heat. Add the cooking oil, then the green beans. Sprinkle salt and black pepper over the beans, stir well, then let them cook undisturbed for about 4 to 5 minutes until browned on one side. Remove from heat and set aside.
- Let rice rest and fluff: When the rice is cooked, remove from heat and keep it covered to rest for 10 minutes. After resting, uncover and fluff the rice with a fork.
- Assemble the bowls: Divide the fluffed rice evenly between two bowls. Top each with half of the blistered green beans and half of the chili crisp. Peel the soft-boiled eggs, slice them lengthwise, and place one half on each bowl as garnish. Serve immediately and enjoy.

- Rinsing the rice until the water runs clear removes excess starch and prevents clumping.
- Cooking eggs straight from the fridge helps keep the yolk centered.
