Ingredients
- 4 large eggs
- 1/3 cup maple syrup or honey
- 1/4 cup melted coconut oil or butter
- 1/2 cup plain Greek yogurt
- 1 1/2 teaspoons vanilla extract
- Zest of 1 lemon (optional)
- 2 cups almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×5″ loaf pan.
- In a medium bowl, whisk together the almond flour, baking powder, and salt.
- In another bowl, beat together the eggs, maple syrup, coconut oil (or butter), Greek yogurt, vanilla extract, and lemon zest (if using) until smooth.
- Fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra flavor, you can add a handful of chopped nuts or berries to the batter.
- If you prefer a sweeter cake, increase the amount of maple syrup or honey slightly.
- Make sure to let the cake cool completely before slicing to get the best texture.
