  • 1/2 cup sour cream
  • 1/4 cup Biscoff spread
  • 1 teaspoon baking soda

  • 6 roughly chopped Biscoff cookies

Instructions

  1. Preheat oven to 350°F. Grease or line a 10x5x3-inch loaf pan with parchment paper.
  2. To make the streusel topping, combine flour, chopped Biscoff cookies, brown sugar, oats, cinnamon, and salt in a bowl.
  3. Cut in cold butter using a pastry cutter or your fingers until the mixture forms coarse crumbs. Set aside.
  4. In a large bowl, mash the ripe bananas until smooth, then stir in melted butter.
  5. Add granulated sugar, eggs, vanilla extract, and salt; mix until well combined.
  6. Stir in sour cream, Biscoff spread, and baking soda.
  7. Gradually mix in flour until just combined, then fold in chopped Biscoff cookies.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Sprinkle the Biscoff streusel topping evenly over the batter.
