Ingredients

  • 2 cups mixed berries (blueberries, raspberries, blackberries, strawberries chopped)
  • 1/4 cup granulated sugar (plus 1 tablespoon for sprinkling)
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 sheet store-bought pie dough (or homemade, chilled)
  • 1 egg (for egg wash)
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mixed berries, 1/4 cup granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Stir until the berries are evenly coated.
  3. Place the pie dough on the prepared parchment-lined baking sheet. Roll out slightly if needed to form a 12-inch circle.
  4. Spoon the berry mixture into the center of the dough, leaving a 2-inch border around the edges.
  5. Fold the edges of the dough over the berries, pleating as you go, leaving the center exposed.
  6. Beat the egg and brush it over the crust. Sprinkle the crust with coarse sugar if desired.
  7. Bake for 30–35 minutes, or until the crust is golden brown and the berry filling is bubbling.
  8. Remove from the oven and let cool for at least 10 minutes to allow the juices to thicken.
  9. Serve warm, optionally with vanilla ice cream or whipped cream.
