Ingredients
- 2 cups mixed berries (blueberries, raspberries, blackberries, strawberries chopped)
- 1/4 cup granulated sugar (plus 1 tablespoon for sprinkling)
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 sheet store-bought pie dough (or homemade, chilled)
- 1 egg (for egg wash)
- Optional: coarse sugar for sprinkling
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the mixed berries, 1/4 cup granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Stir until the berries are evenly coated.
- Place the pie dough on the prepared parchment-lined baking sheet. Roll out slightly if needed to form a 12-inch circle.
- Spoon the berry mixture into the center of the dough, leaving a 2-inch border around the edges.
- Fold the edges of the dough over the berries, pleating as you go, leaving the center exposed.
- Beat the egg and brush it over the crust. Sprinkle the crust with coarse sugar if desired.
- Bake for 30–35 minutes, or until the crust is golden brown and the berry filling is bubbling.
- Remove from the oven and let cool for at least 10 minutes to allow the juices to thicken.
- Serve warm, optionally with vanilla ice cream or whipped cream.

- You can use fresh or frozen berries — if using frozen, do not thaw before mixing.
- Let the galette cool slightly before slicing to avoid runny filling.
