Ingredients
Skillet Base
- 1 tbsp olive oil
- 1 large onion, diced
- 5 cloves garlic, minced
- 1 lb ground beef
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
Enchilada Mix
- 15 ounce can enchilada sauce
- 15 ounce can black beans, rinsed and drained
- 4 ounce can green chilies
- 8 small yellow corn tortillas
- 1 cup shredded sharp cheddar cheese
Instructions
- Preheat and Sauté Onion: Preheat your oven to 425 degrees Fahrenheit. Heat the olive oil in a large skillet over medium-high heat. Add the diced onions and sauté for 3-4 minutes until softened and translucent.
- Brown Beef and Add Spices: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Stir in the minced garlic, chili powder, ground cumin, and dried oregano. Cook for an additional 1-2 minutes to let the spices bloom and the garlic develop flavor.
- Add Sauce, Beans, Chilies, and Tortillas: Stir in the enchilada sauce, black beans, and green chilies. Then toss in the corn tortillas, cutting or layering them so they can absorb the sauce evenly. Mix to ensure the tortillas are well coated with the sauce mixture.
- Top with Cheese and Bake: Sprinkle the shredded sharp cheddar cheese evenly over the top of the skillet mixture. Transfer the skillet to the preheated oven and bake for 10-15 minutes until the cheese is melted and bubbly and the edges begin to brown slightly.
- Serve and Garnish: Remove from the oven and serve immediately. Top with your favorite garnishes like diced tomatoes, chopped onions, radishes, sour cream, cilantro, and hot sauce for extra flavor and freshness.
Notes
- Use a cast-iron or oven-safe skillet to go directly from stovetop to oven.
- Feel free to add more spices like smoked paprika or cayenne for extra heat.
- For a vegetarian version, substitute ground beef with plant-based protein or extra beans.
