A quick and easy stir fry with ground beef, ramen noodles, and a flavorful sauce, perfect for a satisfying weeknight dinner.

Ingredients

  • For the Sauce:
  • ½ cup soy sauce (low sodium)
  • ¼ cup brown sugar
  • 3 tbsp hoisin sauce
  • 2 tsp Sriracha (adjust to preference)
  • 1 tsp sesame oil
  • For the Stir Fry:
  • 1 lb ground beef (lean)
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • 9 oz ramen noodles (3 packs, flavor packets discarded)
  • 20 oz stir fry veggie blend (about 3 cups, frozen)
  • 2 cups cabbage, shredded (optional)
  • 2 tbsp green onions, sliced (for garnish)

Instructions

  1. Make the Sauce: In a small bowl, combine soy sauce, brown sugar, hoisin sauce, Sriracha, and sesame oil. Whisk to combine and set aside.
  2. Prepare the Stir Fry: Bring about 6 cups of water to a boil in a medium-sized pot. Meanwhile, heat a large pan over medium-high heat and cook the ground beef until crumbled and no longer pink. Drain any excess fat and return the pan to medium-high heat. Stir in the minced garlic and ginger, cooking for about 30 seconds until fragrant. Add the frozen stir fry veggies and shredded cabbage (if using) to the pan and cook until heated through.
  3. While the veggies are cooking, add the ramen noodles to the boiling water and cook until tender, about 3 minutes. Drain the noodles and add them to the beef and veggie mixture.
  4. Combine and Serve: Pour the prepared sauce over the beef, veggies, and noodles. Stir everything together, allowing the sauce to thicken and coat the noodles and beef. Serve with freshly sliced green onions on top and enjoy!

Notes

  • Swap the frozen veggie blend for your favorite mix of fresh vegetables. If using fresh veggies, cook them until tender-crisp in the pan with a tablespoon of oil before cooking the beef. Then remove the veggies, cook the beef, and add the veggies back with the noodles.
  • For a spicier dish, increase the amount of Sriracha or add red pepper flakes to the stir fry.
  • This recipe can be made gluten-free by using gluten-free soy sauce and noodles.
