- 8 oz pasta
- 4 cups broccoli florets
- 8 oz brick of feta cheese
- 1/2 cup extra virgin olive oil

- 1/2 tsp fresh cracked black pepper
- 1 tbsp lemon juice
- 2 tbsp lemon zest
- 2 tbsp fresh chopped basil
Instructions
- Preheat and Prepare Broccoli: Preheat your oven to 400°F (204°C). Cut the broccoli florets into quarters and place them in a baking dish. Drizzle with 1/2 cup of extra virgin olive oil, then sprinkle with salt and fresh cracked black pepper. Toss well to ensure the broccoli is evenly coated in oil and seasoning.
- Arrange Feta and Season: Make a space in the center of the broccoli for the feta brick. Place the block of feta in the middle, then drizzle additional olive oil and sprinkle black pepper on top of the feta to enhance flavor.
- Bake Feta and Broccoli: Bake in the preheated oven for 35 minutes, until the broccoli is tender and the feta is soft and starting to brown slightly.
- Cook Pasta: While the feta and broccoli are baking, cook 8 oz (about half a pound) of pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water before draining.
- Combine and Stir: Remove the baking dish from the oven and immediately stir the feta with the roasted broccoli to combine everything. Pour in some reserved pasta water incrementally until the sauce reaches your desired creaminess.
- Mix in Pasta and Finish: Add the warm, cooked pasta into the baking dish and stir thoroughly to coat the pasta with the creamy baked feta and broccoli sauce. Finally, stir in the fresh lemon juice, lemon zest, and chopped basil for a bright, fresh finish. Serve immediately.
Notes
- You can use any short pasta shape such as penne, fusilli, or rigatoni for this recipe.
- Adjust the amount of pasta water to achieve your preferred sauce consistency; add more for a looser sauce or less for a thicker coating.
- Fresh basil can be substituted with parsley or oregano if preferred.
- For a dairy-free version, substitute feta with a vegan cheese alternative and confirm no baking compromise.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently.
