This Avocado Grilled Cheese recipe combines creamy avocado slices with melted Colby-Jack cheese on toasted sourdough bread for a deliciously satisfying sandwich. Perfect for a quick lunch or snack, this grilled cheese is elevated with a hint of smoked paprika and simple seasoning, delivering rich flavors and a delightful texture contrast.

  • Total Time: 15 minutes
  • Yield: 2 sandwiches

Ingredients

Bread and Cheese

  • 4 slices sourdough bread
  • 6 slices Colby-Jack cheese

Avocado Filling

  • 1 ripe avocado, seeded and sliced thin
  • Salt, to taste
  • Black pepper, to taste
  • Smoked paprika, to taste

Other

  • 1 tablespoon butter, room temperature

Instructions

  1. Assemble first cheese layer: On one side of each slice of sourdough bread, place one and a half slices of Colby-Jack cheese evenly to cover the surface for a cheesy base.
  2. Add avocado and seasoning: Layer half of the thinly sliced avocado on top of the cheese on each sandwich. Sprinkle salt, black pepper, and smoked paprika over the avocado for a flavorful punch.
  3. Add second cheese layer and top bread: Place another one and a half slices of cheese on top of the avocado, then cover with the remaining bread slice, creating a sandwich with cheese both beneath and above the avocado.
  4. Repeat sandwich assembly: Repeat steps for the second sandwich to prepare both at the same time.
  5. Butter bread outer sides: Spread the softened butter evenly on the outward-facing sides of the bread to ensure a golden, crisp exterior during cooking.
  6. Heat skillet and toast sandwiches: Heat a skillet over medium heat until hot, then place the sandwiches in the skillet. Cook for 3-4 minutes on the first side until it turns golden brown and crispy.
  7. Flip and melt cheese: Flip the sandwiches carefully, cover the skillet, and reduce heat to medium-low. Cook until the second side is golden brown and the cheese inside fully melts, about 3-4 minutes.
  8. Serve: Remove sandwiches from the skillet, cut in half diagonally or as preferred, and serve immediately while gooey and warm.

Notes

  • Use room temperature butter for easier spreading and better browning.
  • Adjust seasoning on avocado to your taste preference; smoked paprika adds a subtle smoky flavor but can be omitted.
  • For extra crunch, consider adding thinly sliced tomatoes or crispy bacon inside the sandwich.
  • Use a heavy skillet or sandwich press to achieve even browning if available.
  • Ensure avocado is ripe but firm to avoid mushy texture inside the sandwich.
