Instructions

- Combine Crust Ingredients: In a mixing bowl, combine the softened butter, brown sugar, baking soda, rolled oats, and flour. Use a fork and knife or a pastry cutter to mix until the ingredients form a crumbly mixture.
- Form the Base Layer: Measure out 2 cups of the oat mixture and press it gently but firmly into the bottom of the prepared baking dish, creating an even crust layer.
- Spread Apricot Preserves: Carefully spread the apricot preserves evenly over the crust, leaving about 1/4 inch of the crust edge uncovered to seal the filling.
- Add the Crumble Topping: Sprinkle the remaining oat mixture evenly over the apricot preserves, covering the filling completely.
- Bake: Place the dish in the preheated oven and bake for 30 to 35 minutes, or until the topping is golden brown and set.
- Cool and Serve: Allow the bars to cool completely in the pan. Once cooled, cut into 9 bars and enjoy this delicious treat!
