Instructions
- Preheat Oven: Set your oven to 350°F (175°C) and prepare an 8-inch baking pan by greasing it or lining it with parchment paper to prevent sticking.
- Mix Wet Ingredients: In a large bowl, whisk together the applesauce, water, oil (or extra applesauce), vanilla paste, and white vinegar until fully combined and smooth.
- Add Dry Ingredients: Gradually add the flour, sugar, salt, baking soda, baking powder, cinnamon, and optional allspice into the wet mixture. Stir until you have a uniform batter without overmixing.
- Incorporate Optional Mix-ins: Fold in any optional ingredients like raisins, chopped walnuts, or shredded coconut to add texture and flavor.
- Bake the Cake: Pour the batter into the prepared baking pan and smooth the top evenly. Place it on the center oven rack and bake for 18 minutes until a toothpick inserted into the center comes out clean.
- Cool and Serve: Remove the cake from the oven and allow it to cool completely in the pan. Once cooled, frost as desired or enjoy plain. Note that the cake’s flavors deepen and it tastes even sweeter the next day.
