- Cinnamon Sugar:
- 3 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- Apple Filling:
- 4 small sweet apples (Gala, Red Delicious, or Fuji), peeled and diced
- 2 teaspoons lemon juice
- 3 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 2 tablespoons water
- 1/2 teaspoon vanilla extract
- For Assembly & Frying:
- 15 egg roll wrappers (20-inch)
- 1 teaspoon cornstarch mixed with 2 teaspoons water (for sealing)
- 2 cups oil for frying
Instructions
- Make Cinnamon Sugar: Combine sugar and cinnamon in a small plate. Set aside.
- Cook the Apples: Add diced apples, lemon juice, sugar, cinnamon, and water to a skillet. Cook over medium heat for 5–7 minutes until tender but not mushy. Stir in vanilla extract and let cool for at least 25 minutes.
- Assemble Egg Rolls: Place 1/3 cup of the cooled apple mixture on the lower third of a wrapper. Fold the bottom over the filling, then fold in the sides. Roll up gently and seal the edge with the cornstarch slurry. Repeat with remaining wrappers.
- Cooking Options:
- Deep-Fry: Heat oil in a deep pan to 360°F (180°C). Fry 3–4 rolls at a time for 10–12 minutes until golden brown.
- Air-Fry: Preheat air fryer to 400°F (200°C). Brush egg rolls lightly with oil. Air-fry for 10–12 minutes until crisp and golden.
- Finish: Toss hot egg rolls in cinnamon sugar. Let cool for 10 minutes before serving. Enjoy warm with caramel sauce, whipped cream, or vanilla ice cream if desired.
Notes
- Use a mix of apple varieties for more complex flavor.
- Don’t overfill the wrappers to prevent tearing during frying.
- Freeze un-fried egg rolls and cook from frozen as needed.
