Apple Cider Cake
- 3 cups (395g) all purpose flour (see notes for GF version)
- 3/4 cup (150g) light brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 cup (240g) apple cider
- 1/2 cup (125g) unsweetened applesauce
- 1 cup (225g) vegetable oil
- 3 large eggs
- 2 tsp vanilla extract
Coating
- 4 tbsp unsalted butter, melted
- 2 tbsp apple cider
- 1/3 cup (70g) granulated sugar
- 3/4 tsp ground cinnamon
Apple Cider Glaze
- 1 cup (100g) powdered sugar
- 3–4 tsp apple cider
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 10-cup bundt pan with nonstick spray and dust lightly with flour to prevent sticking.
- Mix Dry Ingredients: In a large bowl, sift the flour. Then whisk together the brown sugar, granulated sugar, cinnamon, nutmeg, baking powder, baking soda, and salt until combined.
- Mix Wet Ingredients: In a medium bowl, whisk the apple cider, applesauce, vegetable oil, eggs, and vanilla extract together until smooth.
- Combine Batter: Pour the wet ingredients into the dry ingredients and gently whisk until just combined, being careful not to overmix.
- Bake: Pour the batter into the prepared bundt pan. Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
- Cool the Cake: Allow the cake to cool in the pan for about 15 minutes, then invert it onto a cooling rack and let it cool further for about 30 minutes before applying the coating.
- Prepare Coating: In a small bowl or cup, mix the melted butter and apple cider. In another bowl, combine the granulated sugar and cinnamon.
- Apply Coating: Using a pastry brush, brush the butter and apple cider mixture all over the cake, making sure to cover every surface.
- Add Cinnamon Sugar: Immediately sprinkle the cinnamon sugar mixture all over the cake, pressing it gently so it adheres well.
- Make Glaze: In a small bowl, mix the powdered sugar with 3 to 4 teaspoons of apple cider, adding the cider one teaspoon at a time until the glaze is pourable but not too thin.
- Drizzle Glaze: Drizzle the apple cider glaze over the cake just before serving for an extra sweet and tangy finish.
- Enjoy: Slice the cake and enjoy the moist, flavorful apple cider bundt cake with its delicious cinnamon sugar coating and glaze.
Notes
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend suitable for baking.
- Ensure that the cake is slightly cooled before applying the coating to prevent it from melting too much.
- Use fresh apple cider for the best flavor; shelf-stable apple juice won’t give the same depth of taste.
- This cake stores well covered at room temperature for 2-3 days or can be refrigerated for up to a week.
