These Apple Butter Bars are the perfect fall dessert, featuring layers of cinnamon-spiced oats and brown sugar crumble filled with sweet, tangy apple butter. They’re easy to make, comforting, and delicious served warm or at room temperature.

Ingredients

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour (or cup4cup or GF Bisquick for gluten-free)
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup butter, melted
  • 1 large egg
  • 1 ½ cups apple butter
  • 2 tsp cinnamon sugar mix

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix together oats, flour, brown sugar, granulated sugar, baking powder, salt, and cinnamon.
  3. Add melted butter and use a fork to incorporate it into the dry ingredients. Add the egg and mix until the dough is crumbly but holds together when pressed.
  4. Press half of the mixture evenly into the bottom of the prepared baking dish.
  5. Spread the apple butter evenly over the crust layer.
  6. Sprinkle the remaining dough over the top and gently press down.
  7. Sprinkle with the cinnamon sugar mix.
  8. Bake for 38–40 minutes or until the top is golden brown.
  9. Allow to cool completely in the pan before lifting out with parchment paper, slicing, and serving.

Notes

  • Make sure the bars are completely cooled before slicing to help them hold their shape.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
  • These bars can also be served slightly warm with a scoop of vanilla ice cream for a decadent treat.
  • To make vegan, use a flax egg and plant-based butter.
