Ingredients

  • For the Donuts:
  • 2 1/4 teaspoons yeast (1 packet)
  • 1/4 cup warm water
  • 3/4 cup warm evaporated milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 teaspoon kosher salt
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons salted butter, melted
  • 1/4 cup vegetable shortening, room temperature
  • 3 cups cake flour, spooned and leveled
  • For the Glaze:
  • 3 cups powdered sugar
  • 1/4 cup whole milk
  • 2 tablespoons light corn syrup
  • 2 tablespoons evaporated milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl or stand mixer, mix warm water and yeast. Let sit for 10 minutes until foamy.
  2. Add warm evaporated milk, vanilla, cinnamon, sugar, salt, egg, egg yolk, melted butter, shortening, and cake flour. Mix on low speed until a smooth dough forms—do not overmix.
  3. Cover the bowl with a towel and let the dough rise for 1 hour.
  4. Turn the dough onto a floured surface and roll out to 1” thick. Cut out donuts using a donut cutter or round cutters. Place on a baking sheet.
  5. Cover and let rise another 30 minutes. Preheat air fryer to 350°F (175°C) for 5 minutes.
  6. Line the air fryer basket with foil and spray with coconut oil. Arrange donuts with space between and cook in batches for 6 minutes, flipping halfway through.
  7. Transfer cooked donuts to a wire rack. Meanwhile, whisk together all glaze ingredients in a bowl and heat in a saucepan over medium heat for 10 minutes, then return to bowl.
  8. Dip warm donuts in glaze, then return to rack to allow excess glaze to drip off and set.

Notes

  • Use cake flour for light, tender texture; all-purpose flour works in a pinch but yields denser donuts.
  • Shortening helps with richness and tenderness—do not skip.
