Ingredients
- For the Donuts:
- 2 1/4 teaspoons yeast (1 packet)
- 1/4 cup warm water
- 3/4 cup warm evaporated milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/4 teaspoon kosher salt
- 1 large egg
- 1 large egg yolk
- 2 tablespoons salted butter, melted
- 1/4 cup vegetable shortening, room temperature
- 3 cups cake flour, spooned and leveled
- For the Glaze:
- 3 cups powdered sugar
- 1/4 cup whole milk
- 2 tablespoons light corn syrup
- 2 tablespoons evaporated milk
- 1 teaspoon vanilla extract
Instructions
- In a large bowl or stand mixer, mix warm water and yeast. Let sit for 10 minutes until foamy.
- Add warm evaporated milk, vanilla, cinnamon, sugar, salt, egg, egg yolk, melted butter, shortening, and cake flour. Mix on low speed until a smooth dough forms—do not overmix.
- Cover the bowl with a towel and let the dough rise for 1 hour.
- Turn the dough onto a floured surface and roll out to 1” thick. Cut out donuts using a donut cutter or round cutters. Place on a baking sheet.
- Cover and let rise another 30 minutes. Preheat air fryer to 350°F (175°C) for 5 minutes.
- Line the air fryer basket with foil and spray with coconut oil. Arrange donuts with space between and cook in batches for 6 minutes, flipping halfway through.
- Transfer cooked donuts to a wire rack. Meanwhile, whisk together all glaze ingredients in a bowl and heat in a saucepan over medium heat for 10 minutes, then return to bowl.
- Dip warm donuts in glaze, then return to rack to allow excess glaze to drip off and set.
Notes
- Use cake flour for light, tender texture; all-purpose flour works in a pinch but yields denser donuts.
- Shortening helps with richness and tenderness—do not skip.
- Let donuts cool slightly before glazing for best consistency.
- Donuts are best eaten fresh but can be stored in an airtight container for up to 2 days.
