  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

  • 1 sheet puff pastry, thawed
  • 2 teaspoons cinnamon
  • 1/3 cup brown sugar
  • 1 tablespoon cornstarch
  • 45 medium peaches, sliced 1/3 inch thick
  • 1 large egg, whisked
  • 2 tablespoons coarse granulated sugar
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry to fit the bottom of a 10-inch oven-safe skillet. Press gently into the base and slightly up the sides. Chill while preparing filling.
  3. In a small bowl, mix cinnamon, brown sugar, and cornstarch.
  4. Sprinkle half of the cinnamon-sugar mixture over the base of the puff pastry.
  5. Arrange sliced peaches in overlapping circles or rows on top.
  6. Sprinkle remaining cinnamon-sugar mixture over peaches.
  7. Fold pastry edges slightly over the filling to form a rustic border.
  8. Brush crust with egg wash and sprinkle with coarse sugar.
  9. Drizzle melted butter over the peaches.
  10. Bake for 30–35 minutes or until the crust is golden and peaches are bubbling.
  11. Let cool for 10–15 minutes before serving. Enjoy warm with whipped cream or ice cream.

Notes

  • Use ripe but firm peaches for the best texture and flavor.
  • Refrigerate leftovers in an airtight container for up to 2 days. Reheat in the oven to maintain crispness.
  • This recipe works with other stone fruits like nectarines or plums as well.
