Ingredients
Chicken and Vegetables
- 21 oz chicken breast, sliced into strips
- 2 red bell peppers, sliced
- 2 green bell peppers, sliced
- 1 large onion, sliced
- 2–3 tbsp olive oil
- 1 tsp paprika
- ¼ tsp cumin
- 1 tbsp dried oregano or mixed herbs
- ½ tsp garlic powder
- Salt & black pepper, to taste
- Juice of ½ lemon
Chimichurri Sauce
- 1 cup fresh parsley, finely chopped
- 2 tbsp olive oil
- 1–2 tbsp lemon juice
- 2 small garlic cloves, minced
- 1 tbsp red hot pepper
- Pinch of chili flakes (optional)
- Salt & pepper, to taste
Instructions
- Prepare the Chicken Marinade: In a large bowl, combine the chicken strips with half of the spices including paprika, cumin, oregano, garlic powder, along with lemon juice, olive oil, salt, and pepper. Toss well until the chicken is evenly coated with the marinade.
- Season the Vegetables: Add the sliced red and green bell peppers and onion to the same bowl, then sprinkle the remaining spices over them. Toss thoroughly so the vegetables are well seasoned. For enhanced flavor, optionally marinate the mixture for 15–30 minutes.
- Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat while you prepare the basket.
- Arrange Chicken and Veggies: Place the marinated chicken and vegetables into the air fryer basket in a single, loose, even layer. Avoid overcrowding; cook in batches if necessary to ensure proper air circulation.
- Air Fry: Cook for 25–30 minutes, shaking or stirring halfway through the cooking time to promote even browning and thorough cooking. The chicken should be fully cooked, and vegetables lightly charred on the edges.
- Make the Chimichurri Sauce: While the chicken and vegetables cook, combine the finely chopped parsley, olive oil, lemon juice, minced garlic, dried oregano, red hot pepper, chili flakes (if using), salt, and pepper in a small bowl. Stir well and let the sauce sit for 5–10 minutes to allow the flavors to meld.
- Serve: Plate the hot air-fried chicken and vegetables, then spoon the fresh chimichurri sauce generously over the top. Serve immediately for the best flavor and texture.
Notes
- Marinating the chicken and vegetables for up to 30 minutes is optional but will deepen the flavors.
- If your air fryer basket is small, cook in batches to avoid overcrowding for best results.
- Adjust the amount of chili flakes in the chimichurri sauce according to your heat preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
